“It’s a quino!”. Sorry, whenever I hear the word quinoa now I can’t help but think of that NFL commercial. If you have never seen that commercial just ignore me, no hard feelings.
Anyways I’m really waiting for that moment when I get sick of quinoa. I have been cooking with it A LOT lately, such as in the stuffed acorn squash and dark chocolate dipped quinoa bar recipes, so one would think I’d be tired of it by now. Weirdly enough though, all this cooking has made me want to find even more ways to use it! That brings me to my most recent attempt. Everyone likes pizza and if you don’t we probably wouldn’t be friends (kidding). What happens when you mix a guiltless game day food and a craving for pizza.. quinoa pizza bites!
These adorable bite size creations are perfect as a game day snack, and extremely easy to whip up and throw in the oven during commercials. Quinoa is one of those foods that’s tough to mess up (at least that’s the way I feel). Therefore no need to spend extra time being tedious about measurements, just throw in some of your favorite ingredients and get back to watching the game!
I love foods you can dip. I don’t know why I just always have. After I was done making these, I heated up some marinara sauce to serve on the side and it was perfection.
Turkey Pepperoni Quinoa Pizza Bites Recipes:
1/2 cup quinoa
1 large egg
1/2 cup fat free shredded mozzarella
1 Tbsp garlic powder
1 Tbsp dried Oregano
1/2 cup turkey pepperoni (chopped)
Salt to taste
Marinara Sauce for dipping
1. Add one cup of water and cook quinoa for about 15 minutes. Once the water begins to boil , reduce heat and let it simmer.
2. Preheat oven to 350 degrees. Combine all ingredients (except marinara sauce) in a mixing bowl.
3. Spray muffin tin with non stick spray. Scoop mixture into muffin tin and bake for 15-20 minutes.
4. Let them cool, and heat up marinara sauce while waiting. Serve hot!
